Makes 8-10 biscuits
4 cups all purpose flour
2 tbsp baking powder
2 tsp salt
10 tbsp cold leaf lard or butter (or some of each!) 3/4-1 cup milk or buttermilk
Preheat oven to 425F
Combine flour, baking powder, & salt together and mix thoroughly
Add lard and/or butter to dry ingredients & cut in with a fork or pastry cutter (or your hands!) until pieces are evenly distributed. (You can also use a cheese grater for your butter if you wish)
Mix in milk until a firm dough comes together. Roll out on a lightly floured counter to approx 1/4 inch thickness. Fold into thirds (like a letter) then roll again to 1 inch thick. Use a wide mouth canning ring or biscuit cutter to cut out circles and place in your cast iron pan or parchment paper lined tray.
Bake biscuits for 20-22 minutes, or until golden brown!
1-2lbs breakfast sausage
1 cup all purpose flour
3-4 cups milk
Cook sausage until browned in a pan, leaving any fat/grease. If your sausage is lean, add 2-3 tablespoons of lard or butter and melt down.
Sprinkle flour over cooked meat and mix in until it thickens. Add milk and stir as it heats and thickens - if you like a runnier gravy add closer to 4 cups.
Serve over your fresh biscuits!
(FYI - leftover gravy freezes and reheats amazingly!)
